Ice Cream Dog: The Thai Way of Eating Ice Cream

Before summer is over and it will be too cold to eat ice cream (it will actually never be too cold to eat ice cream, ever), I thought I will post this yummy and convenient method of eating ice cream. This is how I ate it as a kid from the ice cream cart that rang their bells near our school. Ice cream dog is the appropriate way to call it, I think. I have posted a few great ice cream recipes that you can make from coconut milk. My most favorite has to be the banana pecan palm sugar one that I adapted from Baked cookbook. I found that substituting coconut milk for cream or milk in other recipes have always worked for me. Use coconut cream for cream and coconut milk for milk. Many other recipes like blackberry ice cream, lemon ice cream or peach ice cream are all great on hotdog buns.

The difference of coconut milk and cream is the level of fat. When you make coconut milk from scratch, you add water to the shredded coconut meat and squeeze the water out of it. Strain the white thick creamy liquid through fine strainer and that is coconut cream. Add more water to the leftover meat and repeat the steps, the second round of squeezing will yield coconut milk, a less creamy white liquid. When you buy coconut milk or cream from the grocery store, the can that's labelled coconut cream contains only the first round of making. The can that's labelled coconut milk contains both rounds of making.

Assembly of the Dog

1 medium hotdog bun

1/4 cup sweet sticky rice

1 tbsp or more of roasted peanuts

3 scoops ice cream of your choice

Lay the split hotdog bun with sticky rice, top with ice cream and then peanuts. Enjoy!!!!
